Chef Matt Weedon comments: “It’s a hugely enjoyable challenge for a chef to create a menu tailored to a specific style of wine. My aim is to demonstrate the versatility of Laurent Perrier champagnes, their suitability as both apéritif – as one would expect – but also their ability to pair beautifully with more robust, autumnal ingredients from the Cotswolds. We’ve had great fun working on food and wine pairings that will surprise and delight our guests.
Laurent Perrier, founded in 1812 in Tours-sur-Marne, Champagne, is the largest, family-owned champagne house. The owner, from 1949 to the present day, Bernard de Nonancourt, believes that ‘with quality wine and people, you cannot fail’. The house is known for innovation: it was one of the first to introduce stainless steel tanks and was the first to reintroduce zero dosage champagnes to a new generation. Among its well-known wines are its Ultra Brut, Cuvée Rosé Brut and Grand Siècle.

The evening will commence with a champagne and canapé reception at 7pm, followed by dinner at 7.30pm in the restaurant. Places at this exclusive, one-off event cost £99 per person. Guests wishing to prolong their enjoyment of the evening are invited to take advantage of preferential room rates of just £150 for an overnight stay including a full Cotswolds breakfast the following morning.
